Some Serious Pie

I first heard of Tom Douglas in the Pizza episode of The Food Network’s ‘The Best Thing I Ever Ate’. Tyler Florence raved about the chanterelle and truffle pizza at Tom Douglas’ restaurant Serious Pie. Being a regular visitor of our neighbour down south, I added Serious Pie to my weekend itinerary.

After a full day of shopping in downtown Seattle, my friends and I were ravenous by the time we arrived at the restaurant. Reservations aren’t accepted so we considered this a mid-day snack.

I loved the look of the restaurant. The facade rustic and warm – something that I expect out of a good pizza joint! The interior was equally impressive – the large stone applewood-burning oven (it burns at 600F!) was the centrepiece of the open concept kitchen where we could watch the assembling of our pizzas.

I wanted to order my own pizza but after seeing the size of the pizza, hubby and I decided to share one. At first I wanted Tyler Florence’s favourite, but that was quickly replaced with their daily special:

rapini, Pancetta, Parmesan and Olive Oil

I absolutely loved this pizza. The crispy crust was thin and chewy. More like a ‘white pizza’ as it didn’t contain tomato sauce, the flavour was really light and I could taste the fresh rapini with the olive oil and the parmesan. Hubby did say that he would have liked a bit more pancetta on the pizza but he likes bacon on everything.

This was a great robust pizza. The fennel sausage was flavourful and paired well with tomato sauce and provolone.

Final Thoughts
Loved it. The food was fresh, full of flavour and our server was friendly and knowledgable. Their pizzas range in the $18 dollar range so it does cost slightly more than your usual pizza. Located in Belltown, Serious Pie isn’t in the Seattle downtown core, but it’s well worth the short walk.

I’m so glad we made the short trek. I will most definitely return for another visit…or two.
